Hi all,

We have an abundance of courgettes in the garden at the moment.  So decided to make something for lunch with them along with the beautiful fresh sweetcorn from countdown.

Just sweated off the chopped courgettes and corn, added some seasoning and fresh basil from the garden, then garnished with grated mozzarella cheese. Beautiful, yummy and so quick and simple!
